Italian Lemon Cookie Recipe

 

The sweets of Southern Italy are filled with the flavors of Lemons. During the summer I love to have a refreshing glass of lemon Granita but in the colde months of Winter, thee is nothing better than Italian lemon Cookies that bring you the Falvors of Sicily in the Summer.

Italian Lemon Cookie Recipe

Yields: about 3-4 dozen

Prep time: 25 min

Bake time: 15-20 min

 

Ingredients

5 cups all-purpose flour

6 tsp baking powder

1 cup of milk

2 sticks unsalted butter, softened

1 cup sugar

3 large eggs

4 Tbsp vegetable oil

1 tbsp pure lemon extract

Glaze: 1 Dozen

1 ½ cups confectioners sugar

2–3 tbsp fresh lemon juice

1 tsp pure lemon extract

 

Directions

Preheat oven: to 350°F. Line two baking sheets with parchment paper.

 

Mix dry ingredients: In a medium bowl, whisk together flour, and baking powder.

 

Cream butter and sugar: In a large bowl, beat butter and sugar until light and fluffy (about 2 minutes).

 

Add wet ingredients: Beat in eggs one at a time, then mix in oil, milk and lemon extract.

 

Combine: Gradually add dry ingredients until a soft dough forms. It should be slightly sticky but hold its shape.

 

Shape: Scoop about 1 tablespoon of dough and roll into small balls. Place on baking sheet about 2 inches apart.

 

Bake: 12–15 minutes, or until the bottoms are lightly golden. The tops should stay pale. Let cool completely before glazing.

 

Glaze: Mix powdered sugar with lemon juice and extract until smooth and slightly thick. Dip tops of cooled cookies or spoon glaze over them. Optional to add sprinkles. Let set for about 30 minutes.
